A Cake Recipe With Chocolate and Zucchini

An Unusual Cake Recipe With Zucchini and Chocolate

Ingredients:

0.5 Cup to One C. chocolate chips
three courgette, approx. six inches long, cut into thin shreds (approximately 2 cps)
One t. cinnamon
2 A half cup of flour
3 free-range eggs
Half C. real butter
One tsp vanilla essence
0.5 Cup sugar
One C. brown or demerara sugar
1/2 cup vegetable oil
1/2 C. buttermilk
four Tablespoons cocoa powder
1 teaspoon salt
2 teaspoon bicarb of soda

Heres What You Need To Do:

Whilst you are preparing the ingredients, preheat oven to 160 C.

Lightly grease a Nonstick 9″ x 13″ Sheet Cake Pan and put to one side.

Take a mixing bowl andcombine sugars, butter and oil.
Break in the eggs, the vanilla and the buttermilk and give it a good mixing with a wooden spoon.

Using a sieve, sift the cinnamon, cocoa, flour, salt and baking soda and mix well.

Add the powder mix to the wet mix and stir well

Stir in courgettes and stir well.

Pour into the cake tin and toss the choccie chips over the top.

Put into the pre-heated oven and cook for 3/4 hour.

Allow it to cool down a bit, and let it cool on a wire rack.
