Does anyone know the perfect butter-cream icing consistency to make roses?

I use the Wilton.com recipe for my butter-cream icing. (1/2 cup shortening, 1 stick of softened butter, 1 teaspoon clear vanilla, 4 cups of powdered sugar & 2 tablespoons of milk) I will add a tablespoon of light corn syrup if I need to. When I make the roses, the edges of the petals always crack, which is a sign it’s too stiff. BUT it’s also a little too “gooey” which is a sign it’s too soft. Any good answers? Should I switch to royal icing? Help a baker out here. Thanx

You need to add a drop of liquid at a time when your icing is too dry. There is a fine like between too wet and too dry for making flowers.
Did you follow the recipe exactly?
I see where it instructs you to remove some for flower making at some point.
It also does not call for a TABLESPOON of corn syrup, but rather a teaspoon.
Just wondering.
