French desert ideas – - for a competition?

Me and two friends are making a french desert for a competition, we were thinking of making one desert each and then serving all three on a plate as a kind of “trio”.

trio 1 mini tart tatan classic french apple tart with caramelised sugar, dead easy but looks wonderful in petite 2 strawberry bavarois a light creamy fruit dish that can explode with flavour the 3rd in the tri of fruity dishes for me would be say a floating island with raspberry coulis dabbed in the creme anglais and fresh raspberries on the merangue

1 profiteroles with creme patisserie and hot chocolate sauce 2 a trio of layered chocolate mousse white mild and very dark maybe with a lovely creme anglais around it and 3rd a rick chocolate ganache tart with a strawberry on top
