Danish Christmas

My husband’s family is Danish; what is a good dessert to make them when they come for Christmas?

I want to make something Danish they’ll enjoy.

I suggest Æbleskiver. You’ll need a special pan, but Amazon has them, as do target.

500 ml fine white flour (spelt or wheat)
a pinch of salt
2 tsp sugar
1 tsp ground cardamom
1 tsp natron
300 ml milk + 100 ml natural yoghurt (or 400 ml buttermilk if you prefer)
3 eggs, yolks and whites divided

about 3 apples, cored and diced

butter for frying

Mix all the dry ingredients in a bowl.
Mix milk, yogurt and egg yolks and stir them into the flour until liquid and free from lumps. Cover and let rest in a cool place for 15-20 minutes.
In a clean, dry bowl whisk the egg whites until stiff, then fold them into the batter. Heat the æbleskive-pan and melt a small dab of butter in each hole. Fill with batter to just below the rim, and let fry at medium heat until the edge is golden, but the center still liquid. Drop a small piece of apple into each æbleskive, and turn it around. Fry the other side until firm, then keep turning and frying the æbleskive for a few more minutes until golden.
