What can you grow in a winter vegatable garden in Arkansas? We are new to country living.?

I would sow some carrots, beets and radishes for winter time growing. I know Arkansas gets more ice storms then snow storms. So I would take those veggies and create a long running plastic green house over the rows. This would stop the ice from the plants. But even a good thick mulch will work and when ready go out move the mulch and dig the veggies you plant. Cole crops will do well too till it is a very hard freeze. So you can try some broccoli, cauliflower and cabbage too. They all love the colder weather just fine. Happy planting. I am from Pa and have done the carrot thing here till the ground is rock hard. It works well.
